St. Patrick’s Day is a fun day to celebrate Irish traditions, whether or not you’re of Irish descent. For some people, eating green foods for St. Patrick’s Day means eating green-colored mashed potatoes and cabbage alongside a mug of green beer. While putting green food dye into your favorite foods is one way to enjoy the holiday, a better, healthier way is to eat whole, natural green foods.
St. Patrick’s Day Gorgeous Green Salad
Salad
- 6 cups green leaf lettuce
- 1 green apple (sliced thin)
- ½ cup celery (sliced thin)
- 1 avocado (cubed)
- ¼ cup pistachios
- ¼ cup golden raisins
Dressing
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon dijon mustard
- ½ teaspoon honey
- Salt & pepper
- Combine salad ingredients in a bowl. Combine dressing in a container with a lid. Shake until ingredients are blended.
