St. Patrick’s Day is a fun day to celebrate Irish traditions, whether or not you’re of Irish descent. For some people, eating green foods for St. Patrick’s Day means eating green-colored mashed potatoes and cabbage alongside a mug of green beer. While putting green food dye into your favorite foods is one way to enjoy the holiday, a better, healthier way is to eat whole, natural green foods.

St. Patrick’s Day Gorgeous Green Salad

Salad

  • 6 cups green leaf lettuce
  • 1 green apple (sliced thin)
  • ½ cup celery (sliced thin)
  • 1 avocado (cubed)
  • ¼ cup pistachios
  • ¼ cup golden raisins

Dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon honey
  • Salt & pepper
  1. Combine salad ingredients in a bowl. Combine dressing in a container with a lid. Shake until ingredients are blended.
